Lemon & Garlic Salmon Pasta

320g penne pasta
2 cloves garlic, crushed
Small bunch basil leaves, finely chopped
4 salmon fillets
Zest of ½ lemon
2 tbsp lemon juice
20g Parmesan cheese, grated
Household Staples
15ml olive oil
Salt and pepper to taste
Method
Pre-heat oven to 180℃
Cook the pasta according to package directions
Meanwhile, season salmon with salt and pepper to taste and bake in oven for 12-15 minutes, depending on thickness
Once the pasta is cooked, drain and toss with garlic, olive oil and basil then season with salt and pepper to taste
Add lemon juice, lemon zest and 15g Parmesan to the pasta and toss to combine
Place salmon on top of pasta and garnish with remaining Parmesan
Serving Suggestion:
Garnish with fresh parsley and extra lemon.
