Cook the rice for the length of time indicated on the pack, mix in the lemon juice and soy sauce and allow to cool.
Cut the cucumber into ribbons, and sprinkle over some salt. After 5 minutes, wipe off the salt and mop up any liquid using kitchen paper.
For an attractive presentation, use a jar with a lid and layer the ingredients, starting with half of the rice on the bottom, followed by the cucumber, tomatoes, another layer of rice, and finishing with the peppers and the shredded lettuce on top. Top with the peanuts, if using.
Any ingredients that are left over can be mixed together for a mixed salad.
Serving Suggestion: Serve with oven cooked spring rolls.
