flour/ splash of milk (if needed to thicken / thin sauce)
In a medium pan, heat butter and olive oil at a medium heat. Add onions and cook for 5 minutes until softened. Add garlic and sage and cook for a further 3 minutes.
Add red wine and paprika, and reduce heat slightly. Season with salt and pepper.
In another pan, sear steak at a high heat for 2 minutes until medium rare. Remove from pan. Add sliced mushrooms to pan and cook until softened. Add cooked steak and mushrooms to first pan with all other ingredients.
Add parsley, and more salt and pepper to taste, to simmering pan.
Add sour cream and bring to gentle boil. Reduce heat and simmer to thicken sauce. Add flour if sauce is too thin or a splash of milk if too thick. Stir well.
Serving Suggestion: Serve with boiled rice, garnish with parsley and gherkins.
