Prick the potatoes with a fork and cook on high in the microwave oven for 5 minutes. Then rub the potatoes with olive oil, sprinkle over some salt and transfer to a baking tray in the oven. Turn them over after 20 minutes, and cook for a further 20 minutes.
In the meantime, add 1 tbsp olive oil to a pot over medium heat. Once the oil is hot, add the onions and cook until soft. Then add the mince beef and cook until brown.
Add the diced carrot to the pot. Dissolve the beef stock cube in the boiling water and add to the pot. Add the tomato ketchup and Worcestershire sauce and continue to cook the sauce slowly.
When the potatoes are cooked, put on two plates and then it’s time to split and fill.
Spoon over the beef and carrot topping and finish off with grated cheese.
Serving Suggestion: Serve with a green salad.
